Family Favorite Story

This recipe was born from one of those “what’s in the fridge?” nights. My husband had just picked up a fresh loaf of sourdough, and I had a jar of marinara calling my name. After adding a few eggs and baking it to perfection, I knew I had stumbled upon something special. Now, it’s a go-to recipe when our family gathers for Sunday brunch. My kids love dipping their bread into the yolks, and it always reminds us of cozy mornings spent together.

Description

Let me whisk you away to the sun-soaked hills of Tuscany with this easy yet luxurious Italian Baked Eggs recipe.

Ingredients

  • 1 baguette, halved and sliced lengthwise

  •  tablespoons extra-virgin olive oil

  • 4 ounces low-moisture mozzarella, sliced into 8 pieces

  • 12 ounces hot Italian turkey sausage, casings removed

  •  cups chopped yellow onion

  • 3 garlic cloves, chopped

  • 28-ounce can crushed tomatoes

  •  teaspoons chopped fresh oregano, plus more for serving

  • ¾ teaspoon kosher salt

  • 4 large eggs

  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Make the cheesy toasts.

Preheat the oven to 400°F. Place baguette slices on a baking sheet, brush them with oil, and top each with 2 slices mozzarella. Bake until the cheese is bubbly and light golden brown, about 12 minutes.

  2. Cook the sausage.

Meanwhile, heat a large ovenproof nonstick skillet over medium-high. Add sausage and cook, stirring and breaking it apart with a wooden spoon, until almost cooked through, about 5 minutes.

  3. Stir in the other sauce ingredients.

Add onion and garlic to the sausage and cook, stirring, until the onion is translucent, about 3 minutes. Add the tomatoes, oregano, and salt, and then bring to a simmer, occasionally stirring, until slightly thickened, about 3 minutes.

  4. Add the eggs.

Reduce oven temperature to 375°F. Break the eggs into the sauce, leaving space between them, and then sprinkle with pepper.

  5. Bake and serve.

Transfer the skillet to the oven and bake until the egg whites are set but the yolks are still soft, 7 to 9 minutes. Top with fresh oregano and serve in bowls with mozzarella toast.
