For the Chicken Marinade:

  • 1 ½ lbs boneless, skinless chicken breast (or thighs), cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Skewers:

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 small red onion, cut into wedges
  • Cherry tomatoes (optional)
  • Wooden or metal skewers

Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, mix together olive oil, lemon juice, garlic, smoked paprika, cumin, oregano, salt, and black pepper.
  2. Add the chicken cubes and toss to coat evenly. Cover and marinate for at least 30 minutes (or up to 4 hours for max flavor).

Step 2: Assemble the Kabobs

  1. If using wooden skewers, soak them in water for 20-30 minutes to prevent burning.
  2. Thread marinated chicken, bell peppers, onion wedges, and cherry tomatoes onto the skewers, alternating for a colorful look.

Step 3: Air Fry to Perfection

  1. Preheat your air fryer to 375°F (190°C).
  2. Place the kabobs in the air fryer basket in a single layer (work in batches if needed).
  3. Air fry for 12-15 minutes, flipping halfway, until the chicken reaches an internal temperature of 165°F (75°C) and has a slight char.

Step 4: Serve & Enjoy!

  1. Remove from the air fryer, let rest for 2 minutes, and serve with rice, pita, tzatziki, or a fresh salad.
