For the Chicken Marinade:
- 1 ½ lbs boneless, skinless chicken breast (or thighs), cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Skewers:
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 small red onion, cut into wedges
- Cherry tomatoes (optional)
- Wooden or metal skewers

Step 1: Marinate the Chicken
- In a large bowl, mix together olive oil, lemon juice, garlic, smoked paprika, cumin, oregano, salt, and black pepper.
- Add the chicken cubes and toss to coat evenly. Cover and marinate for at least 30 minutes (or up to 4 hours for max flavor).
Step 2: Assemble the Kabobs
- If using wooden skewers, soak them in water for 20-30 minutes to prevent burning.
- Thread marinated chicken, bell peppers, onion wedges, and cherry tomatoes onto the skewers, alternating for a colorful look.
Step 3: Air Fry to Perfection
- Preheat your air fryer to 375°F (190°C).
- Place the kabobs in the air fryer basket in a single layer (work in batches if needed).
- Air fry for 12-15 minutes, flipping halfway, until the chicken reaches an internal temperature of 165°F (75°C) and has a slight char.
Step 4: Serve & Enjoy!
- Remove from the air fryer, let rest for 2 minutes, and serve with rice, pita, tzatziki, or a fresh salad.
