  • ½ tsp black pepper
  • 2 eggs, beaten
  • Cooking spray or olive oil spray

  • Marinara sauce
  • Ranch dressing
  • Garlic aioli

Instructions

Step 1: Prep the Zucchini

Wash and slice the zucchini into thin rounds, about ¼-inch thick. Pat them dry with a paper towel to remove excess moisture—this helps them crisp up better.

Step 2: Prepare the Breading

In one shallow bowl, beat the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper.

Step 3: Coat the Zucchini

Dip each zucchini slice into the beaten eggs, letting the excess drip off. Then, coat it in the breadcrumb mixture, pressing gently to help it stick.

Step 4: Air Fry to Crispy Perfection

Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray. Arrange the zucchini slices in a single layer (work in batches if needed). Spray the tops with a light coat of cooking spray.

Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.
