Ingredients
For the Zucchini Chips:
- 2 medium zucchini, sliced into thin rounds
- 1 cup breadcrumbs (panko or Italian-style)
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 eggs, beaten
- Cooking spray or olive oil spray
For Dipping (Optional):
- Marinara sauce
- Ranch dressing

Instructions
Wash and slice the zucchini into thin rounds, about ¼-inch thick. Pat them dry with a paper towel to remove excess moisture—this helps them crisp up better.
In one shallow bowl, beat the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper.
Dip each zucchini slice into the beaten eggs, letting the excess drip off. Then, coat it in the breadcrumb mixture, pressing gently to help it stick.
