For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Apple Crumble Topping:

  • 2 large apples, peeled and thinly sliced
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, melted

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
    • In a bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined.
    • Press the mixture into the bottom of the pan and bake for 10 minutes. Set aside to cool.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat the cream cheese and sugar until smooth and creamy.
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
    • Pour the filling over the cooled crust and smooth the top with a spatula.
  3. Prepare the Apple Topping:
    • In a bowl, toss the sliced apples with sugar and cinnamon. Spread the apples evenly over the cheesecake filling.
  4. Make the Crumble Topping:
    • In another bowl, mix the flour, oats, brown sugar, and melted butter until crumbly. Sprinkle over the apples.
  5. Bake the Cheesecake:
    • Place the pan in the oven and bake for 45–50 minutes or until the center is set but slightly jiggly.
    • Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight for best results.
  6. Serve and Enjoy:
    • Carefully remove the cheesecake from the pan. Slice and serve chilled or at room temperature.
