For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
For the Apple Crumble Topping:
- 2 large apples, peeled and thinly sliced
- 2 tbsp granulated sugar
- 1 tsp cinnamon
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/3 cup brown sugar
- 1/4 cup unsalted butter, melted
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined.
- Press the mixture into the bottom of the pan and bake for 10 minutes. Set aside to cool.
- Make the Cheesecake Filling:
- In a large bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
- Pour the filling over the cooled crust and smooth the top with a spatula.
- Prepare the Apple Topping:
- In a bowl, toss the sliced apples with sugar and cinnamon. Spread the apples evenly over the cheesecake filling.
- Make the Crumble Topping:
- In another bowl, mix the flour, oats, brown sugar, and melted butter until crumbly. Sprinkle over the apples.
- Bake the Cheesecake:
- Place the pan in the oven and bake for 45–50 minutes or until the center is set but slightly jiggly.
- Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight for best results.
