How to Make Baileys Chocolate Mousse Trifle

Step 1: Prepare the Chocolate Mousse

  1. Melt the dark chocolate in a heatproof bowl over a saucepan of simmering water. Let it cool slightly.
  2. In a separate bowl, whisk the egg yolks and sugar until pale. Gradually mix in the melted chocolate.
  3. Beat 1 cup of heavy cream until soft peaks form. Gently fold it into the chocolate mixture. Stir in the Baileys. Chill for at least 1 hour.

Step 2: Make the Baileys Custard

  1. Heat the milk in a saucepan over medium heat until steaming.
  2. In a bowl, whisk together sugar, cornstarch, and egg yolks until smooth. Gradually add the hot milk, whisking constantly.
  3. Return the mixture to the saucepan and cook over low heat, stirring, until thickened. Remove from heat and stir in Baileys and vanilla. Cool completely.

Step 3: Whip the Cream

  1. In a chilled bowl, beat the remaining heavy cream with powdered sugar until soft peaks form.

Step 4: Assemble the Trifle

  1. In a trifle dish or individual glasses, layer the chocolate cake cubes, Baileys custard, chocolate mousse, and whipped cream.
  2. Repeat layers until the dish is full, ending with whipped cream on top.
