There’s something magical about the transformation of a humble apple when it’s baked. Its sweetness intensifies, the texture becomes irresistibly tender, and the natural juices turn into a luscious syrup.

For the Baked Apples:

  • 4 large apples (Honeycrisp, Gala, or Fuji work well)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts or pecans (optional)
  • 3 tbsp honey, plus extra for drizzling
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp melted butter

For Serving:

  • Fresh mint leaves (optional garnish)
  • Vanilla ice cream or Greek yogurt (optional)

Instructions

  • Prepare the Apples:
    Preheat your oven to 375°F (190°C). Core the apples, leaving the bottom intact to create a “cup” for the filling. Place them in a greased baking dish.
  • Make the Filling:
    In a small bowl, mix the feta, cranberries, walnuts (if using), cinnamon, nutmeg, and 2 tablespoons of honey.
  • Stuff the Apples:
    Spoon the filling into each apple, pressing gently to pack it in. Drizzle the melted butter over the apples.
  • Bake:
    Pour a small amount of water (about 1/4 cup) into the bottom of the dish to prevent sticking. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15–20 minutes until the apples are tender.
  • Drizzle and Serve:
    Remove the apples from the oven and drizzle them with the remaining honey. Garnish with fresh mint if desired. Serve warm with a dollop of Greek yogurt or a scoop of vanilla ice cream.
