For the Donuts:

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ground ginger
  • ¼ tsp cloves
  • ½ tsp salt
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • ⅓ cup brown sugar
  • ⅓ cup granulated sugar
  • ½ cup milk (dairy or almond milk)
  • ¼ cup melted coconut oil (or vegetable oil)
  • 1 tsp vanilla extract

For the Maple Glaze:

  • 1 cup powdered sugar
  • 2 tbsp maple syrup
  • 12 tbsp milk
  • ½ tsp vanilla extract

Instructions

1️⃣ Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or coconut oil.

2️⃣ Mix the Dry Ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.

3️⃣ Mix the Wet Ingredients:
In a separate bowl, whisk together pumpkin puree, brown sugar, granulated sugar, milk, melted coconut oil, and vanilla extract until smooth.

4️⃣ Combine:
Slowly add the dry ingredients to the wet ingredients and mix until just combined — don’t overmix! The batter will be thick.

5️⃣ Fill the Donut Pan:
Spoon or pipe the batter into the donut pan, filling each cavity about ¾ full.

6️⃣ Bake:
Bake for 12-15 minutes or until the donuts are fluffy and a toothpick comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
