Description

These are Baked Strawberry Cake Doughnuts, and they are soft, fluffy, and bursting with fresh strawberry flavor.

For the Doughnuts:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • ¾ cup finely chopped strawberries (fresh or frozen, thawed and drained)

For the Strawberry Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons strawberry puree (blend fresh strawberries)
  • ½ teaspoon vanilla extract
  • 12 tablespoons milk (as needed for consistency)

Instructions

1️⃣ Prep & Preheat

Preheat your oven to 350°F (175°C). Lightly grease a doughnut pan with nonstick spray or butter.

2️⃣ Mix the Batter

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

In another bowl, whisk the egg, melted butter, buttermilk, and vanilla extract until smooth.

Gradually fold the wet ingredients into the dry, stirring gently until just combined. Do not overmix!

Fold in the chopped strawberries.

3️⃣ Fill the Doughnut Pan

Spoon or pipe the batter into the prepared doughnut pan, filling each mold about ¾ full.

4️⃣ Bake

Bake for 10-12 minutes, or until a toothpick inserted into the doughnuts comes out clean.

Let the doughnuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

5️⃣ Make the Glaze

Blend fresh strawberries into a smooth puree. In a bowl, whisk together powdered sugar, strawberry puree, and vanilla extract. Add a little milk if needed to thin it out.

6️⃣ Dip & Enjoy

Dip each cooled doughnut into the glaze, letting the excess drip off. Place on a rack and let the glaze set. Enjoy immediately or store for later!
