Let’s talk about the perfect balance of sweet, smoky, cheesy goodness. If there’s one pizza that brings bold flavors and total comfort, it’s this Barbecue Chicken Pizza. Imagine a crisp, golden crust, layered with tangy BBQ sauce, juicy shredded chicken, gooey melted cheese, and a pop of red onion—all topped off with a sprinkle of fresh cilantro.

For the Pizza Dough (or use store-bought!):

  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 teaspoon salt
  • ¾ cup warm water
  • 1 tablespoon olive oil

For the Toppings:

  • 1 cup shredded cooked chicken (rotisserie works great!)
  • ½ cup barbecue sauce (plus extra for drizzling)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese (optional, for extra richness)
  • ¼ cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon garlic powder (for extra flavor!)
  • ½ teaspoon smoked paprika (for that smoky kick)

Instructions

Step 1: Prepare the Dough

  1. In a bowl, mix flour, yeast, and salt. Add warm water and olive oil, then knead until smooth (about 5 minutes).
  2. Cover and let rest for 15 minutes while you prep the toppings.

Step 2: Prep the Chicken

  1. In a bowl, toss shredded chicken with ½ cup BBQ sauce, garlic powder, and smoked paprika. Set aside.

Step 3: Assemble the Pizza

  1. Preheat your oven to 475°F (245°C).
  2. Roll out the dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  3. Spread a thin layer of BBQ sauce over the dough.
  4. Sprinkle a mix of mozzarella and cheddar cheese evenly over the sauce.
  5. Scatter the BBQ chicken on top, followed by sliced red onions.

Step 4: Bake to Perfection

  1. Bake for 12-15 minutes until the cheese is melted and bubbly and the crust is golden brown.

Step 5: Garnish & Serve!

  1. Remove from the oven and sprinkle with fresh cilantro.
  2. Drizzle a little extra BBQ sauce for that final touch. Slice & enjoy!
