If you’ve never tried Cheesecake Salad, let me introduce you to your new favorite dessert. It’s light, creamy, and bursting with fresh fruit, all wrapped up in a tangy cheesecake-inspired dressing.
Ingredients
For the Cheesecake Dressing:
- 1 (8 oz) cream cheese, softened
- 1 cup Greek yogurt (or sour cream for extra richness)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (8 oz) tub Cool Whip (or homemade whipped cream)
For the Fruit Mix:
- 2 cups strawberries, sliced
- 1 cup blueberries
- 1 cup red grapes, halved
- 2 bananas, sliced (add just before serving)
- 1 cup mini marshmallows (optional but delicious!)
Instructions
1️⃣ In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
2️⃣ Add the Greek yogurt, powdered sugar, and vanilla extract, and mix until fully combined.
3️⃣ Gently fold in the Cool Whip until the mixture is light and fluffy.
1️⃣ Gently fold in the strawberries, blueberries, and grapes until coated in the cheesecake mixture.
2️⃣ Wait to add the bananas! (They’ll brown quickly, so add them just before serving.)
3️⃣ If using, stir in the mini marshmallows for extra texture and fun.
1️⃣ Cover and refrigerate for at least 1 hour to let the flavors blend.
2️⃣ Just before serving, gently fold in the banana slices.
3️⃣ Serve chilled and enjoy every creamy, fruity bite!
