For the Crust:
- 2 cups (200 g) chocolate cookie crumbs
- 5 tablespoons unsalted butter, melted
For the Cheesecake:
- 3 (8 oz/225 g) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup semi-sweet chocolate chips, melted and slightly cooled
- 3 large eggs
- 1 teaspoon vanilla extract
For the Cherry Topping:
- 1½ cups cherry pie filling
- 1 tablespoon kirsch (optional, for authentic flavor)
For the Garnish:
- Whipped cream
- Dark chocolate shavings or curls
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix chocolate cookie crumbs with melted butter until evenly coated.
- Press the mixture into the bottom of a 9-inch springform pan, spreading it evenly to form a firm crust. Chill in the refrigerator while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat the cream cheese and sugar with an electric mixer until smooth and creamy.
- Add the melted chocolate and vanilla extract, mixing until fully incorporated.
- Add the eggs one at a time, beating on low speed to avoid overmixing.
Step 3: Assemble and Bake
- Pour the cheesecake batter over the prepared crust.
- Dollop spoonfuls of cherry pie filling onto the batter and gently swirl it with a knife for a marbled effect.
- Bake for 50–60 minutes, or until the edges are set, and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour to prevent cracking.
Step 4: Chill and Garnish
- Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
- Before serving, top with whipped cream, cherry filling, and chocolate shavings.
