  • 2 cups (200 g) chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted

For the Cheesecake:

  • 3 (8 oz/225 g) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup semi-sweet chocolate chips, melted and slightly cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract

For the Cherry Topping:

  • 1½ cups cherry pie filling
  • 1 tablespoon kirsch (optional, for authentic flavor)

For the Garnish:

  • Whipped cream
  • Dark chocolate shavings or curls

 


Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix chocolate cookie crumbs with melted butter until evenly coated.
  3. Press the mixture into the bottom of a 9-inch springform pan, spreading it evenly to form a firm crust. Chill in the refrigerator while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat the cream cheese and sugar with an electric mixer until smooth and creamy.
  2. Add the melted chocolate and vanilla extract, mixing until fully incorporated.
  3. Add the eggs one at a time, beating on low speed to avoid overmixing.

Step 3: Assemble and Bake

  1. Pour the cheesecake batter over the prepared crust.
  2. Dollop spoonfuls of cherry pie filling onto the batter and gently swirl it with a knife for a marbled effect.
  3. Bake for 50–60 minutes, or until the edges are set, and the center is slightly jiggly.
  4. Turn off the oven and let the cheesecake cool inside for 1 hour to prevent cracking.

Step 4: Chill and Garnish

  1. Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  2. Before serving, top with whipped cream, cherry filling, and chocolate shavings.
