For the Blackened Shrimp:

  • 1 lb large shrimp, peeled & deveined
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne (optional, for extra heat!)

For the Chipotle Crema:

  • ½ cup sour cream (or Greek yogurt for a lighter option!)
  • 1 tablespoon mayonnaise
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 teaspoon lime juice
  • ½ teaspoon garlic powder
  • Pinch of salt

For the Tacos:

  • 8 small corn or flour tortillas, warmed
  • 1 cup shredded cabbage or slaw mix
  • 1 avocado, sliced
  • ¼ cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

Step 1: Make the Chipotle Crema

  1. In a small bowl, whisk together sour cream, mayo, chopped chipotle pepper, lime juice, garlic powder, and salt.
  2. Taste and adjust seasoning if needed. Set aside.

Step 2: Season & Cook the Shrimp

  1. In a large bowl, toss shrimp with olive oil and all the blackening spices until evenly coated.
  2. Heat a large skillet or grill pan over medium-high heat.
  3. Add shrimp in a single layer and cook for 2-3 minutes per side until charred and cooked through.

Step 3: Assemble the Tacos

  1. Warm the tortillas on a dry skillet or over an open flame.
  2. Layer each tortilla with cabbage, blackened shrimp, and avocado slices.
  3. Drizzle with chipotle crema and sprinkle with cilantro.
