- 1 lb large shrimp, peeled & deveined
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne (optional, for extra heat!)
For the Chipotle Crema:
- ½ cup sour cream (or Greek yogurt for a lighter option!)
- 1 tablespoon mayonnaise
- 1 chipotle pepper in adobo sauce, finely chopped
- 1 teaspoon lime juice
- ½ teaspoon garlic powder
- Pinch of salt
For the Tacos:
- 8 small corn or flour tortillas, warmed
- 1 cup shredded cabbage or slaw mix
- 1 avocado, sliced
- ¼ cup chopped cilantro
- 1 lime, cut into wedges
Instructions
Step 1: Make the Chipotle Crema
- In a small bowl, whisk together sour cream, mayo, chopped chipotle pepper, lime juice, garlic powder, and salt.
- Taste and adjust seasoning if needed. Set aside.
Step 2: Season & Cook the Shrimp
- In a large bowl, toss shrimp with olive oil and all the blackening spices until evenly coated.
- Heat a large skillet or grill pan over medium-high heat.
- Add shrimp in a single layer and cook for 2-3 minutes per side until charred and cooked through.
Step 3: Assemble the Tacos
- Warm the tortillas on a dry skillet or over an open flame.
- Layer each tortilla with cabbage, blackened shrimp, and avocado slices.
- Drizzle with chipotle crema and sprinkle with cilantro.
