These zucchini sticks are a crowd-pleaser for sure, whether you’re serving them as a party appetizer, a side dish, or just a snack to curb those afternoon cravings. 


Ingredients

For the Zucchini Sticks:

  • 2 medium zucchinis, cut into sticks
  • 1 cup breadcrumbs (panko or regular for extra crunch)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste
  • 2 large eggs, beaten
  • ½ cup flour (all-purpose or gluten-free)
  • Olive oil spray (if baking)

For the Ranch Dip:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp buttermilk (or regular milk for thinner consistency)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp fresh dill (or 1 tsp dried dill)
  • Salt & pepper, to taste

Instructions

Step 1: Prep the Zucchini

  • Cut the zucchinis into even sticks (about 3 inches long). Pat them dry with paper towels to remove excess moisture—this helps them crisp up!

Step 2: Set Up Your Breading Station

  • In one bowl, place the flour.
  • In another bowl, beat the eggs.
  • In a third bowl, mix the breadcrumbs, Parmesan, garlic powder, Italian seasoning, and salt & pepper.

Step 3: Bread the Zucchini

  • Dip each zucchini stick first in flour, then in egg, and finally coat with the breadcrumb mixture. Press the crumbs on lightly for extra crispiness.

Step 4: Cook the Zucchini Sticks

  • For Baking:
    • Preheat your oven to 425°F (220°C).
    • Place the zucchini sticks on a baking sheet lined with parchment paper.
    • Lightly spray with olive oil and bake for 20-25 minutes, flipping halfway until golden and crispy.
  • For Frying:
    • Heat about 1 inch of oil in a deep pan over medium heat.
    • Fry the zucchini sticks in batches for 2-3 minutes per side until golden brown.
    • Transfer to a plate lined with paper towels to drain excess oil.

Step 5: Make the Ranch Dip

  • In a bowl, mix together mayonnaise, sour cream, buttermilk, garlic powder, onion powder, dill, and salt & pepper. Adjust seasoning to taste and chill until ready to serve.

Step 6: Serve & Enjoy!

  • Serve the crispy zucchini sticks hot with the ranch dip on the side. Watch them disappear in minutes!
