For the Zucchini Sticks:
- 2 medium zucchinis, cut into sticks
- 1 cup breadcrumbs (panko or regular for extra crunch)
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt & pepper, to taste
- 2 large eggs, beaten
- ½ cup flour (all-purpose or gluten-free)
- Olive oil spray (if baking)
For the Ranch Dip:
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 tbsp buttermilk (or regular milk for thinner consistency)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp fresh dill (or 1 tsp dried dill)
- Salt & pepper, to taste
Instructions
Step 1: Prep the Zucchini
- Cut the zucchinis into even sticks (about 3 inches long). Pat them dry with paper towels to remove excess moisture—this helps them crisp up!
Step 2: Set Up Your Breading Station
- In one bowl, place the flour.
- In another bowl, beat the eggs.
- In a third bowl, mix the breadcrumbs, Parmesan, garlic powder, Italian seasoning, and salt & pepper.
Step 3: Bread the Zucchini
- Dip each zucchini stick first in flour, then in egg, and finally coat with the breadcrumb mixture. Press the crumbs on lightly for extra crispiness.
Step 4: Cook the Zucchini Sticks
- For Baking:
- Preheat your oven to 425°F (220°C).
- Place the zucchini sticks on a baking sheet lined with parchment paper.
- Lightly spray with olive oil and bake for 20-25 minutes, flipping halfway until golden and crispy.
- For Frying:
- Heat about 1 inch of oil in a deep pan over medium heat.
- Fry the zucchini sticks in batches for 2-3 minutes per side until golden brown.
- Transfer to a plate lined with paper towels to drain excess oil.
Step 5: Make the Ranch Dip
- In a bowl, mix together mayonnaise, sour cream, buttermilk, garlic powder, onion powder, dill, and salt & pepper. Adjust seasoning to taste and chill until ready to serve.
