This Cheesy Hamburger Potato Soup is all that and more. It’s packed with tender chunks of potato, savory ground beef, and a rich, cheesy broth that will have everyone going back for seconds.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken or beef broth
  • 2 cups milk
  • 2 tbsp all-purpose flour
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: cooked bacon, green onions, extra cheese

Instructions

Step 1: Brown the Beef

  1. Heat a large pot or Dutch oven over medium heat.
  2. Add the ground beef and cook until browned, breaking it into crumbles.
  3. Remove the beef and set aside, draining excess grease.

Step 2: Sauté the Vegetables

  1. In the same pot, sauté the onion and garlic until softened and fragrant.

Step 3: Cook the Potatoes

  1. Add the diced potatoes to the pot and pour in the broth.
  2. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

Step 4: Make the Soup Creamy

  1. Whisk the milk and flour together in a small bowl, ensuring no lumps remain.
  2. Slowly stir the mixture into the pot, cooking for 2-3 minutes until thickened.

Step 5: Add Cheese and Cream

  1. Stir in the shredded cheddar cheese and heavy cream.
  2. Return the cooked beef to the pot and mix well.
  3. Season with smoked paprika, salt, and pepper.

Step 6: Serve and Enjoy

  1. Ladle the soup into bowls and top with your favorite garnishes, like crispy bacon or green onions.
