- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken or beef broth
- 2 cups milk
- 2 tbsp all-purpose flour
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Optional toppings: cooked bacon, green onions, extra cheese
Instructions
Step 1: Brown the Beef
- Heat a large pot or Dutch oven over medium heat.
- Add the ground beef and cook until browned, breaking it into crumbles.
- Remove the beef and set aside, draining excess grease.
Step 2: Sauté the Vegetables
- In the same pot, sauté the onion and garlic until softened and fragrant.
Step 3: Cook the Potatoes
- Add the diced potatoes to the pot and pour in the broth.
- Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
Step 4: Make the Soup Creamy
- Whisk the milk and flour together in a small bowl, ensuring no lumps remain.
- Slowly stir the mixture into the pot, cooking for 2-3 minutes until thickened.
Step 5: Add Cheese and Cream
- Stir in the shredded cheddar cheese and heavy cream.
- Return the cooked beef to the pot and mix well.
- Season with smoked paprika, salt, and pepper.
