Ingredients

  • For the Steak Bites:
    • 1 lb steak tips or sirloin, cut into bite-sized pieces
    • 2 tbsp olive oil
    • 2 garlic cloves, minced
    • Salt and pepper, to taste
  • For the Pasta:
    • 12 oz rotini pasta
    • 3 tbsp butter
    • 2 tbsp all-purpose flour
    • 2 cups milk (whole or 2%)
    • 1 cup shredded cheddar cheese
    • 1/2 cup grated Parmesan cheese
    • 1/2 tsp paprika
    • 1/2 tsp onion powder
    • Salt and pepper, to taste
  • Optional Garnish:
    • Fresh parsley or chives, chopped

Instructions

  • Cook the Pasta:
    Bring a pot of salted water to a boil and cook the rotini according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • Prepare the Steak Bites:
    Heat olive oil in a large skillet over medium-high heat. Season the steak pieces with salt and pepper, then sear them in the skillet for 2-3 minutes per side until browned. Remove and set aside.
  • Make the Cheese Sauce:
    In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden. Gradually add the milk, whisking constantly to avoid lumps. Cook until the sauce thickens, about 3-5 minutes.
  • Add the Cheese:
    Stir in the cheddar, Parmesan, paprika, onion powder, and a pinch of salt and pepper. Mix until the cheese is fully melted and the sauce is smooth.
  • Combine and Serve:
    Toss the cooked rotini and steak bites into the cheese sauce. If the sauce is too thick, add a splash of the reserved pasta water. Serve immediately, garnished with parsley or chives.
