- For the Pasta:
- 12 oz rotini pasta
- 3 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk (whole or 2%)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp paprika
- 1/2 tsp onion powder
- Salt and pepper, to taste
- Optional Garnish:
- Fresh parsley or chives, chopped
Instructions
- Cook the Pasta:
Bring a pot of salted water to a boil and cook the rotini according to package instructions. Reserve 1/2 cup of pasta water before draining. - Prepare the Steak Bites:
Heat olive oil in a large skillet over medium-high heat. Season the steak pieces with salt and pepper, then sear them in the skillet for 2-3 minutes per side until browned. Remove and set aside. - Make the Cheese Sauce:
In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden. Gradually add the milk, whisking constantly to avoid lumps. Cook until the sauce thickens, about 3-5 minutes. - Add the Cheese:
Stir in the cheddar, Parmesan, paprika, onion powder, and a pinch of salt and pepper. Mix until the cheese is fully melted and the sauce is smooth. - Combine and Serve:
Toss the cooked rotini and steak bites into the cheese sauce. If the sauce is too thick, add a splash of the reserved pasta water. Serve immediately, garnished with parsley or chives.
