- 2 large sweet onions, cut into thick rings
- 8 oz mozzarella cheese, cut into strips or use string cheese
- 1 cup all-purpose flour
- 3 large eggs, beaten
- 1½ cups breadcrumbs (panko for extra crunch)
- ½ cup grated Parmesan cheese (optional, for extra flavor)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper, to taste
- Oil for frying (vegetable or canola)
For Dipping:
- Marinara sauce
- Spicy ranch
- Honey mustard
Instructions
Step 1: Prepare the Onion Rings
- Peel and slice the onions into thick rings (about ½ inch thick). Separate the rings and pair similar-sized ones together to create space for the cheese.
Step 2: Stuff with Cheese
- Place a strip of mozzarella cheese between two onion rings (one smaller ring inside the larger one), pressing them together gently. Repeat until all the rings are stuffed.
Step 3: Set Up the Breading Station
- In three separate bowls:
- Bowl 1: Flour mixed with a pinch of salt & pepper.
- Bowl 2: Beaten eggs.
- Bowl 3: Breadcrumbs, Parmesan, garlic powder, and paprika.
Step 4: Bread the Rings
- Carefully coat each stuffed ring in flour, then dip into the egg, and finally coat thoroughly in the breadcrumb mixture. For extra crunch, repeat the egg and breadcrumb step for a double coating.
Step 5: Fry to Golden Perfection
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry the onion rings in batches for 2-3 minutes per side or until golden brown and crispy.
- Drain on paper towels to remove excess oil.
