- 2 cups cooked chicken (shredded or diced)
- 2 cups cooked rice (white or brown)
- 2 cups broccoli florets, chopped
- 1 can (10.5 oz) cream of chicken soup
- ½ cup sour cream
- ½ cup milk
- 1 ½ cups shredded cheddar cheese, divided
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Salt & pepper to taste
- ½ cup crushed Ritz crackers (for topping, optional)
- 2 tablespoons melted butter (for topping, optional)
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish to prevent sticking.
Step 2: Mix the Casserole
- In a large mixing bowl, combine the cooked chicken, rice, and broccoli.
- Stir in the cream of chicken soup, sour cream, milk, 1 cup of cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
Step 3: Assemble & Bake
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle the remaining ½ cup of cheddar cheese over the top.
- (Optional) In a small bowl, mix the crushed Ritz crackers with melted butter and sprinkle over the casserole for a crunchy topping.
Step 4: Bake to Perfection
- Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for 5 minutes before serving.
