This Cheesy Chicken Broccoli Rice Casserole is the kind of dish you turn to when you need something hearty, comforting, and easy to throw together. It’s creamy, cheesy, and packed with tender chicken, fluffy rice, and crisp broccoli—all baked to golden perfection.


Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets, chopped
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt & pepper to taste
  • ½ cup crushed Ritz crackers (for topping, optional)
  • 2 tablespoons melted butter (for topping, optional)

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish to prevent sticking.

Step 2: Mix the Casserole

  1. In a large mixing bowl, combine the cooked chicken, rice, and broccoli.
  2. Stir in the cream of chicken soup, sour cream, milk, 1 cup of cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.

Step 3: Assemble & Bake

  1. Spread the mixture evenly into the prepared baking dish.
  2. Sprinkle the remaining ½ cup of cheddar cheese over the top.
  3. (Optional) In a small bowl, mix the crushed Ritz crackers with melted butter and sprinkle over the casserole for a crunchy topping.

Step 4: Bake to Perfection

  1. Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool for 5 minutes before serving.

Step 5: Serve & Enjoy!

Scoop out generous portions and serve warm. It’s perfect on its own or with a side of garlic bread or a crisp salad!
