For the Brownies:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Chocolate Covered Strawberries:

  • 1 lb fresh strawberries, washed and dried thoroughly
  • 1 cup semi-sweet chocolate chips
  • 1 tsp coconut oil or vegetable oil

For Garnish (Optional):

  • White chocolate for drizzling
  • Sprinkles or crushed nuts

Instructions

  • Prepare the Brownies:
    • Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
    • In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla.
    • Mix in the cocoa powder, flour, salt, and baking powder until just combined. Pour the batter into the prepared pan and spread evenly.
    • Bake for 20–25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely.
  • Make the Chocolate Covered Strawberries:
    • In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each interval until smooth.
    • Dip each strawberry into the melted chocolate, letting the excess drip off. Place them on a parchment-lined baking sheet to set.
  • Assemble the Brownies:
    • Once the brownies are cool, arrange the chocolate-covered strawberries on top. Drizzle with melted white chocolate or sprinkle with nuts if desired.
  • Slice and Serve:
    • For clean slices, chill the brownies for 15–20 minutes before cutting. Serve and enjoy!
