For the Brownies:
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
For the Chocolate Covered Strawberries:
- 1 lb fresh strawberries, washed and dried thoroughly
- 1 cup semi-sweet chocolate chips
- 1 tsp coconut oil or vegetable oil
For Garnish (Optional):
- White chocolate for drizzling
- Sprinkles or crushed nuts
Instructions
- Prepare the Brownies:
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla.
- Mix in the cocoa powder, flour, salt, and baking powder until just combined. Pour the batter into the prepared pan and spread evenly.
- Bake for 20–25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely.
- Make the Chocolate Covered Strawberries:
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each interval until smooth.
- Dip each strawberry into the melted chocolate, letting the excess drip off. Place them on a parchment-lined baking sheet to set.
- Assemble the Brownies:
- Once the brownies are cool, arrange the chocolate-covered strawberries on top. Drizzle with melted white chocolate or sprinkle with nuts if desired.
- Slice and Serve:
- For clean slices, chill the brownies for 15–20 minutes before cutting. Serve and enjoy!
