For the Cookies:
- ½ cup butter, softened
- ¾ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¼ cup milk
For the Cheesecake Filling:
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
For the Cinnamon Sugar Coating:
- ½ cup granulated sugar
- 1 ½ tsp ground cinnamon
- 3 tbsp melted butter
Instructions
Step 1: Make the Cheesecake Filling
- In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Scoop small teaspoon-sized dollops onto parchment paper and freeze for 15-20 minutes.
Step 2: Make the Cookie Dough
- In a large bowl, cream butter and sugar until fluffy.
- Add the egg and vanilla, mixing well.
- In another bowl, whisk together flour, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, alternating with milk, until combined.
Step 3: Fill & Shape the Cookies
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Take a spoonful of dough, flatten it, and place a frozen cheesecake dollop in the center.
- Gently wrap the dough around the filling, sealing it completely into a ball shape.
Step 4: Bake the Cookies
- Place cookies on the baking sheet and bake for 10-12 minutes, or until light golden brown.
- Let cool for 2 minutes before rolling in cinnamon sugar.
Step 5: Coat in Cinnamon Sugar
- Mix sugar and cinnamon in a bowl.
- Brush each cookie with melted butter, then roll in the cinnamon-sugar mixture.
- Serve warm and enjoy the gooey cheesecake center!
