For the Cookies:

  • ½ cup butter, softened
  • ¾ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup milk

For the Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

For the Cinnamon Sugar Coating:

  • ½ cup granulated sugar
  • 1 ½ tsp ground cinnamon
  • 3 tbsp melted butter

Instructions

Step 1: Make the Cheesecake Filling

  • In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  • Scoop small teaspoon-sized dollops onto parchment paper and freeze for 15-20 minutes.

Step 2: Make the Cookie Dough

  • In a large bowl, cream butter and sugar until fluffy.
  • Add the egg and vanilla, mixing well.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Slowly add the dry ingredients to the wet mixture, alternating with milk, until combined.

Step 3: Fill & Shape the Cookies

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Take a spoonful of dough, flatten it, and place a frozen cheesecake dollop in the center.
  • Gently wrap the dough around the filling, sealing it completely into a ball shape.

Step 4: Bake the Cookies

  • Place cookies on the baking sheet and bake for 10-12 minutes, or until light golden brown.
  • Let cool for 2 minutes before rolling in cinnamon sugar.

Step 5: Coat in Cinnamon Sugar

  • Mix sugar and cinnamon in a bowl.
  • Brush each cookie with melted butter, then roll in the cinnamon-sugar mixture.
  • Serve warm and enjoy the gooey cheesecake center!
