Description

These cookies bake up beautifully golden brown, with a caramelized brown sugar chewiness and just the right hint of vanilla and cinnamon.

For the Cookie Dough:

  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon (optional but recommended!)

For the Filling:

  • ½ cup cookie butter (chilled for 30 minutes for easy scooping)

Instructions

Step 1: Chill the Cookie Butter

  1. Using a small spoon, scoop 1-teaspoon-sized portions of cookie butter onto a parchment-lined plate.
  2. Place in the freezer for at least 30 minutes—this makes them easier to handle and stuff inside the dough.

Step 2: Make the Cookie Dough

  1. In a large bowl, mix the melted butter, brown sugar, and granulated sugar until smooth.
  2. Add the egg and vanilla extract and mix until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  5. Cover the dough and refrigerate for 30 minutes—this helps with shaping and stuffing!

Step 3: Stuff & Shape the Cookies

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop 2 tablespoons of cookie dough, flatten it slightly, and place a frozen cookie butter ball in the center.
  3. Wrap the dough around the filling, rolling it into a ball. Make sure the cookie butter is fully enclosed!
  4. Place the cookies on the baking sheet 2 inches apart.

Step 4: Bake & Enjoy!

  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Let the cookies cool for 5 minutes on the baking sheet before transferring to a wire rack.
  3. Serve warm for maximum gooeyness!
