Description
This dish is pure comfort — layers of seasoned ground beef, black beans, sweet corn, melty cheese, and fluffy cornbread all baked together in one dish.
Ingredients
For the Filling:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (15 oz) black beans, drained + rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt + pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
For the Cornbread Topping:
- 1 box Jiffy cornbread mix (8.5 oz)
- 1 egg
- ⅓ cup milk
- 1 tbsp honey (optional for a little sweetness)
- ½ cup shredded cheddar cheese (for topping)
Instructions
In a large skillet, cook the ground beef and onion over medium heat until browned (about 5-7 minutes). Drain excess grease. Add garlic, chili powder, cumin, paprika, garlic powder, salt, and pepper — stir until fragrant (about 1 minute).
Add the black beans, corn, and Rotel tomatoes to the skillet. Simmer everything together for 5-7 minutes until thick and bubbly. Stir in 1 cup of shredded cheddar + Monterey Jack cheese until melted.
Pour the beef mixture into a greased 9×13-inch baking dish.
In a bowl, whisk together the Jiffy mix, egg, milk, and honey. Spread the cornbread batter evenly over the top of the beef mixture. Sprinkle with the remaining shredded cheddar cheese.
Bake at 400°F for 20-25 minutes until the cornbread is golden brown and cooked through. Let it cool for 5 minutesbefore serving.
Garnish with fresh cilantro, sour cream, and a drizzle of hot sauce for that perfect cowboy bite!
