If you love Key lime pie, you’re going to be obsessed with these Creamy Lime Bars. They take all the best parts of the classic dessert—the tangy citrus, the smooth filling, and the buttery crust—and turn it into an easy-to-make, sliceable treat.

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the Creamy Lime Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 4 large egg yolks
  • ½ cup fresh lime juice (about 45 limes)
  • 1 tbsp lime zest

For Garnish (Optional):

  • Whipped cream
  • Lime slices
  • Extra lime zest

Instructions

Step 1: Prep the Crust

Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper for easy removal.

In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the texture resembles wet sand. Press the mixture firmly into the bottom of the pan to form an even crust. Bake for 8-10 minutes, then let cool while you prepare the filling.

Step 2: Make the Lime Filling

In a mixing bowl, whisk together the sweetened condensed milk, egg yolks, lime juice, and lime zest until smooth and well combined. Pour the mixture over the cooled crust.

Step 3: Bake to Perfection

Bake for 15-18 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let cool to room temperature.

Step 4: Chill & Serve

Refrigerate for at least 2 hours (or overnight) for the best texture. Once chilled, cut into bars and garnish with whipped cream, lime slices, or a sprinkle of lime zest. Enjoy!
