Description

This Creamy Spinach Mushroom Chicken is a rich, indulgent dish made with golden-seared chicken, sautéed mushrooms, and a velvety garlic Parmesan sauce.


Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (or 4 small ones, sliced in half lengthwise)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 2 tablespoons olive oil

For the Creamy Spinach Mushroom Sauce:

  • 2 tablespoons butter
  • 8 oz mushrooms, sliced (button or cremini work best!)
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup chicken broth
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional, for a little heat!)
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach

Optional Garnishes:

  • Fresh parsley or basil
  • Extra Parmesan for serving

Instructions

Step 1: Season & Sear the Chicken

  1. Pat chicken dry with paper towels, then season both sides with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.

Step 2: Cook the Mushrooms & Garlic

  1. In the same skillet, melt butter and add sliced mushrooms.
  2. Sauté for 4-5 minutes, stirring occasionally, until mushrooms are golden.
  3. Add garlic and cook for 30 seconds until fragrant.

Step 3: Make the Creamy Sauce

  1. Pour in chicken broth and let it simmer for 1-2 minutes to deglaze the pan.
  2. Stir in heavy cream, Italian seasoning, and red pepper flakes.
  3. Add grated Parmesan cheese, stirring until the sauce is smooth and creamy.

Step 4: Add Spinach & Chicken

  1. Stir in fresh spinach and let it wilt for 1-2 minutes.
  2. Return the seared chicken to the skillet and let it simmer in the sauce for 3-5 minutes until fully cooked.

Step 5: Serve & Enjoy!

  1. Garnish with fresh parsley and extra Parmesan.
  2. Serve over pasta, rice, mashed potatoes, or with crusty bread.
