For the Chicken:
- 2 large boneless, skinless chicken breasts (or 4 small ones, sliced in half lengthwise)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 2 tablespoons olive oil
For the Creamy Spinach Mushroom Sauce:
- 2 tablespoons butter
- 8 oz mushrooms, sliced (button or cremini work best!)
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter version)
- ½ cup chicken broth
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional, for a little heat!)
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
Optional Garnishes:
- Fresh parsley or basil
- Extra Parmesan for serving
Instructions
Step 1: Season & Sear the Chicken
- Pat chicken dry with paper towels, then season both sides with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
Step 2: Cook the Mushrooms & Garlic
- In the same skillet, melt butter and add sliced mushrooms.
- Sauté for 4-5 minutes, stirring occasionally, until mushrooms are golden.
- Add garlic and cook for 30 seconds until fragrant.
Step 3: Make the Creamy Sauce
- Pour in chicken broth and let it simmer for 1-2 minutes to deglaze the pan.
- Stir in heavy cream, Italian seasoning, and red pepper flakes.
- Add grated Parmesan cheese, stirring until the sauce is smooth and creamy.
Step 4: Add Spinach & Chicken
- Stir in fresh spinach and let it wilt for 1-2 minutes.
- Return the seared chicken to the skillet and let it simmer in the sauce for 3-5 minutes until fully cooked.
Step 5: Serve & Enjoy!
- Garnish with fresh parsley and extra Parmesan.
- Serve over pasta, rice, mashed potatoes, or with crusty bread.
