- 2 tbsp cornstarch
- 1 ½ cups whole milk
- ½ cup heavy cream

Step 1: Prepare the Strawberries
- In a blender or food processor, puree the strawberries until smooth. You should have about 1½ cups of puree. If you prefer a smoother pudding, strain the puree through a fine mesh sieve to remove seeds.
Step 2: Make the Pudding Base
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.
- Slowly add the milk and heavy cream, whisking constantly to avoid lumps.
- Stir in the strawberry puree and place the saucepan over medium heat.
Step 3: Cook the Pudding
- Cook the mixture, stirring constantly, until it begins to thicken—this should take about 8-10 minutes. You’ll know it’s ready when it coats the back of a spoon.
- Remove from heat and stir in the vanilla extract.
Step 4: Chill and Serve
- Pour the pudding into individual serving dishes or one large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
- Refrigerate for at least 2 hours until fully chilled.
