Creamy Strawberry Pudding is a smooth, rich dessert that’s bursting with fresh strawberry flavor. Made with real strawberries and simple ingredients, this pudding delivers a perfect balance of sweetness and tang, wrapped in a velvety, custard-like texture.

  • 2 cups fresh strawberries, hulled and sliced
  • ½ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional: whipped cream or mint leaves for garnish

Instructions

Step 1: Prepare the Strawberries

  1. In a blender or food processor, puree the strawberries until smooth. You should have about 1½ cups of puree. If you prefer a smoother pudding, strain the puree through a fine mesh sieve to remove seeds.

Step 2: Make the Pudding Base

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  2. Slowly add the milk and heavy cream, whisking constantly to avoid lumps.
  3. Stir in the strawberry puree and place the saucepan over medium heat.

Step 3: Cook the Pudding

  1. Cook the mixture, stirring constantly, until it begins to thicken—this should take about 8-10 minutes. You’ll know it’s ready when it coats the back of a spoon.
  2. Remove from heat and stir in the vanilla extract.

Step 4: Chill and Serve

  1. Pour the pudding into individual serving dishes or one large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
  2. Refrigerate for at least 2 hours until fully chilled.
  3. Serve with whipped cream, fresh strawberries, or a sprinkle of graham cracker crumbs for added texture!
