This recipe came about on one of those busy days when I wanted something quick but packed with flavor. 


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup plain Greek yogurt
  • 1 small cucumber, finely diced (or grated, with excess water squeezed out)
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt and pepper to taste
  • Optional: ½ cup cherry tomatoes, halved; ¼ cup red onion, thinly sliced

Instructions

Step 1: Prep the Tzatziki Dressing
In a medium mixing bowl, combine the Greek yogurt, olive oil, minced garlic, fresh dill, lemon juice, and lemon zest. Stir until smooth and creamy. Season with salt and pepper to taste.

Step 2: Add the Chicken and Veggies
Fold in the cooked chicken, diced cucumber, and any optional mix-ins like cherry tomatoes or red onion. Make sure everything is evenly coated in the creamy dressing.

Step 3: Chill and Serve
For the best flavor, refrigerate the salad for at least 30 minutes before serving. Enjoy it as is, spooned into pita bread, or served over a bed of fresh greens.
