For the Salmon Bites:

  • 1 lb salmon, skin removed, cut into 1-inch cubes
  • ½ cup cornstarch (for extra crispiness)
  • 2 eggs, beaten
  • ¾ cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Oil for frying (vegetable or avocado oil)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon Sriracha (adjust for heat preference)
  • 1 teaspoon honey (optional, for extra sweetness)
  • 1 teaspoon lemon juice

For Serving:

  • Chopped green onions
  • Sesame seeds
  • Lime wedges

Instructions

Step 1: Prep the Salmon

  1. Pat the salmon dry with a paper towel—this helps the coating stick.
  2. Season with garlic powder, smoked paprika, salt, and black pepper.

Step 2: Set Up the Breading Station

  1. Place cornstarch in a shallow dish.
  2. In another bowl, beat the eggs.
  3. In a third dish, mix panko breadcrumbs and flour.

Step 3: Coat & Fry

  1. Dredge each salmon bite in cornstarch, then dip into the egg, and finally coat in the panko mixture.
  2. Heat oil in a pan to 350°F (175°C).
  3. Fry salmon bites for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels.

Step 4: Make the Bang Bang Sauce

  1. In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, honey, and lemon juice. Stir until smooth.

Step 5: Serve & Enjoy!

  1. Drizzle or toss the salmon bites in Bang Bang sauce.
