These Crispy Mashed Potato Cheese Bites are a snack everyone will fight over—they’re comforting, indulgent, and incredibly easy to whip up.

For the Potato Mixture:
- 2 cups mashed potatoes (chilled)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
For Coating:
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup breadcrumbs (panko preferred)
For Frying:
- Vegetable oil
Instructions
- Mix the Potato Filling
Combine mashed potatoes, cheeses, green onions, garlic powder, onion powder, salt, and pepper in a large bowl. Mix well. - Shape the Bites
Scoop 1 tablespoon of the mixture and roll it into a ball. Repeat with the rest. - Coat the Bites
Roll each ball in flour, dip it in beaten eggs, and coat it with breadcrumbs. - Fry to Perfection
Heat oil in a skillet over medium heat. Fry the bites in batches until golden brown, about 2–3 minutes per side. Drain on paper towels. - Serve and Enjoy
Serve hot with dipping sauces like ranch, sour cream, or marinara.
