These crispy, golden-brown Onion Petals are like the best part of a blooming onion, but easier, crispier, and even more snackable.

For the Onion Petals:
- 2 large sweet onions (Vidalia or Walla Walla)
- 1 cup buttermilk
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne (optional for heat)
- 1 large egg
- Vegetable oil for frying
For the Zesty Dipping Sauce:
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon prepared horseradish
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- Salt & pepper to taste
Instructions
Step 1: Prep the Onions
- Peel and cut the onions into quarters, then separate them into individual petals.
- Soak the petals in buttermilk for at least 30 minutes (this helps with crispiness!).
Step 2: Make the Batter
- In a bowl, whisk together flour, cornstarch, paprika, garlic powder, salt, black pepper, and cayenne.
- In another bowl, whisk the egg into the remaining buttermilk.
Step 3: Coat the Onion Petals
- Remove the onions from the buttermilk.
- Dip each petal into the flour mixture, then into the buttermilk-egg mix, and back into the flour mixture for a crispy double coating.
Step 4: Fry to Perfection
- Heat oil in a deep pan to 350°F (175°C).
- Fry the onion petals in batches for 2-3 minutes until golden brown and crispy.
- Transfer to a paper towel-lined plate and sprinkle with salt.
Step 5: Make the Zesty Dipping Sauce
- Whisk together mayo, ketchup, Worcestershire, horseradish, garlic powder, paprika, cayenne, salt, and pepper.
- Let it chill for 10 minutes before serving.
