Ingredients

For the Onion Petals:

  • 2 large sweet onions (Vidalia or Walla Walla)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne (optional for heat)
  • 1 large egg
  • Vegetable oil for frying

For the Zesty Dipping Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon prepared horseradish
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • Salt & pepper to taste

Instructions

Step 1: Prep the Onions

  1. Peel and cut the onions into quarters, then separate them into individual petals.
  2. Soak the petals in buttermilk for at least 30 minutes (this helps with crispiness!).

Step 2: Make the Batter

  1. In a bowl, whisk together flour, cornstarch, paprika, garlic powder, salt, black pepper, and cayenne.
  2. In another bowl, whisk the egg into the remaining buttermilk.

Step 3: Coat the Onion Petals

  1. Remove the onions from the buttermilk.
  2. Dip each petal into the flour mixture, then into the buttermilk-egg mix, and back into the flour mixture for a crispy double coating.

Step 4: Fry to Perfection

  1. Heat oil in a deep pan to 350°F (175°C).
  2. Fry the onion petals in batches for 2-3 minutes until golden brown and crispy.
  3. Transfer to a paper towel-lined plate and sprinkle with salt.

Step 5: Make the Zesty Dipping Sauce

  1. Whisk together mayo, ketchup, Worcestershire, horseradish, garlic powder, paprika, cayenne, salt, and pepper.
  2. Let it chill for 10 minutes before serving.
