For the Beef Tips:
- 2 lbs beef stew meat (or sirloin, chuck, or round steak, cut into bite-sized pieces)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce (adds depth & umami)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional, but adds a deep flavor)
- 1 teaspoon dried thyme (or Italian seasoning)
For the Gravy:
- 1 packet brown gravy mix (or homemade gravy mix)
- 1 tablespoon cornstarch + 2 tablespoons water (for thickening)
- 1/2 cup heavy cream (optional, for a creamy gravy)
Instructions
Step 1: Prep the Ingredients
- Season the beef with salt, pepper, and smoked paprika.
- Dice the onion and mince the garlic for extra flavor.
Step 2: Assemble in the Crockpot
- Place the beef, onion, and garlic into the slow cooker.
- Pour in the beef broth, Worcestershire sauce, soy sauce, and thyme. Stir to combine.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until beef is tender.
Step 3: Make the Gravy
- About 30 minutes before serving, whisk the gravy mix with ½ cup of hot broth from the crockpot.
- Stir the gravy mixture back into the crockpot.
- Mix cornstarch with water, then stir it in to thicken the sauce.
- If using, add heavy cream for a richer, creamier texture.
- Cover and let cook for another 30 minutes.

- Spoon the tender beef tips and rich gravy over mashed potatoes, egg noodles, or rice.
- Garnish with fresh parsley for a pop of color and freshness.
