For the Beef Tips:

  • 2 lbs beef stew meat (or sirloin, chuck, or round steak, cut into bite-sized pieces)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (adds depth & umami)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika (optional, but adds a deep flavor)
  • 1 teaspoon dried thyme (or Italian seasoning)

For the Gravy:

  • 1 packet brown gravy mix (or homemade gravy mix)
  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening)
  • 1/2 cup heavy cream (optional, for a creamy gravy)

Instructions

Step 1: Prep the Ingredients

  1. Season the beef with salt, pepper, and smoked paprika.
  2. Dice the onion and mince the garlic for extra flavor.

Step 2: Assemble in the Crockpot

  1. Place the beef, onion, and garlic into the slow cooker.
  2. Pour in the beef broth, Worcestershire sauce, soy sauce, and thyme. Stir to combine.
  3. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until beef is tender.

Step 3: Make the Gravy

  1. About 30 minutes before serving, whisk the gravy mix with ½ cup of hot broth from the crockpot.
  2. Stir the gravy mixture back into the crockpot.
  3. Mix cornstarch with water, then stir it in to thicken the sauce.
  4. If using, add heavy cream for a richer, creamier texture.
  5. Cover and let cook for another 30 minutes.

Step 4: Serve & Enjoy!

  1. Spoon the tender beef tips and rich gravy over mashed potatoes, egg noodles, or rice.
  2. Garnish with fresh parsley for a pop of color and freshness.
