For the Crockpot:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 box (6 oz) stuffing mix (chicken or herb-flavored)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream or Greek yogurt
- 1 cup chicken broth
- 1/2 cup diced onion (optional)
- 1 cup frozen mixed vegetables (optional)
- Salt and black pepper, to taste
Optional Garnish:
- Fresh parsley, chopped
Instructions
- Prepare the Crockpot: Spray the inside of your crockpot with cooking spray for easy cleanup.
- Layer the Ingredients: Place the chicken breasts at the bottom of the crockpot. Season with salt and pepper.
- Make the Stuffing Mixture: In a bowl, mix the stuffing mix, cream of chicken soup, sour cream, and chicken broth until well combined.
- Assemble: Spread the stuffing mixture evenly over the chicken. If using vegetables, scatter them over the top.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and tender.
- Serve: Gently stir the stuffing and chicken together before serving. Garnish with fresh parsley if desired.
