For the Crockpot:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 box (6 oz) stuffing mix (chicken or herb-flavored)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup chicken broth
  • 1/2 cup diced onion (optional)
  • 1 cup frozen mixed vegetables (optional)
  • Salt and black pepper, to taste

Optional Garnish:

  • Fresh parsley, chopped

Instructions

  • Prepare the Crockpot: Spray the inside of your crockpot with cooking spray for easy cleanup.
  • Layer the Ingredients: Place the chicken breasts at the bottom of the crockpot. Season with salt and pepper.
  • Make the Stuffing Mixture: In a bowl, mix the stuffing mix, cream of chicken soup, sour cream, and chicken broth until well combined.
  • Assemble: Spread the stuffing mixture evenly over the chicken. If using vegetables, scatter them over the top.
  • Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and tender.
  • Serve: Gently stir the stuffing and chicken together before serving. Garnish with fresh parsley if desired.
