Sometimes, comfort food just needs a little twist to make it extraordinary, and that’s exactly what this Crockpot French Onion Meatloaf does.


Ingredients

For the Meatloaf:

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper, to taste

For the French Onion Base:

  • 2 large onions, thinly sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp sugar

For Topping:

  • 68 slices Swiss cheese

Instructions

  1. Prepare the French Onion Base:
    In a skillet, heat butter and olive oil over medium heat. Add sliced onions and sugar. Cook, stirring occasionally, until the onions are golden and caramelized, about 20 minutes.
  2. Assemble the Meatloaf:
    In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, Worcestershire sauce, garlic powder, thyme, salt, and pepper. Mix gently until just combined. Shape into a loaf.
  3. Layer in the Crockpot:
    Place half of the caramelized onions in the bottom of the slow cooker. Add the meatloaf on top. Pour beef broth and Worcestershire sauce over everything. Top with the remaining onions.
  4. Cook Low and Slow:
    Cover and cook on low for 6–7 hours, or until the meatloaf reaches an internal temperature of 160°F (70°C).
  5. Add the Cheese:
    During the last 15 minutes of cooking, place Swiss cheese slices on top of the meatloaf. Cover and let the cheese melt.
  6. Serve:
    Carefully lift the meatloaf from the slow cooker. Slice and serve with onions and broth spooned over the top.
