Crust:
- 2 cups chocolate cookie crumbs
- 6 tbsp unsalted butter, melted

- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 8 oz semi-sweet chocolate, melted and cooled
- 2 tsp vanilla extract
Topping:
- 1 ½ cups cherry pie filling
- 1 cup heavy whipping cream, whipped
- Dark chocolate curls or shavings
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, mix the cookie crumbs and melted butter until combined. Press the mixture firmly into the bottom of the pan. Chill while you prepare the filling.
- Make the Cheesecake Filling:
- In a large bowl, beat the cream cheese and sugar until smooth. Add sour cream, eggs (one at a time), and vanilla, mixing until fully incorporated.
- Slowly mix in the melted chocolate until evenly combined.
- Pour the filling over the crust and smooth the top.
- Bake the Cheesecake:
- Place the springform pan in a larger baking dish and fill the dish with an inch of hot water (water bath).
- Bake for 55-65 minutes, or until the edges are set but the center is slightly jiggly.
- Remove from the oven and let cool completely, then refrigerate for at least 4 hours or overnight.
- Add the Toppings:
- Spread the cherry pie filling over the chilled cheesecake.
- Top with whipped cream and garnish with chocolate curls or shavings.
