These Brownie Truffles are perfect for those moments when you want something chocolatey, but don’t feel like baking a full batch of brownies.

For the Brownie Truffles:
- 1 batch baked brownies (homemade or store-bought)
- 4 oz cream cheese, softened
- ½ teaspoon vanilla extract
For the Chocolate Coating:
- 10 oz semi-sweet or dark chocolate, melted
- 1 teaspoon coconut oil or butter (for a smooth chocolate coating)
- Optional: Sprinkles, crushed nuts, or sea salt for topping
Instructions
Step 1: Prepare the Brownie Dough
- Bake your brownies and let them cool completely. (Or use leftover brownies if you have any!)
- Crumble the brownies into a large bowl, making sure there are no big chunks.
- Mix in the softened cream cheese and vanilla extract, stirring until the mixture is smooth and forms a dough-like consistency.
Step 2: Roll the Truffles
- Scoop out about 1 tablespoon of the mixture and roll it into a ball.
- Place the brownie balls on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to firm up.
Step 3: Dip in Chocolate
- Melt the chocolate and coconut oil together until smooth.
- Using a fork or skewer, dip each brownie ball into the melted chocolate, letting the excess drip off.
- Place back on the parchment paper and immediately sprinkle with sea salt, sprinkles, or crushed nuts if desired.
Step 4: Chill and Enjoy!
- Let the truffles set in the fridge for at least 15-20 minutes before serving.
- Store in an airtight container in the fridge for up to a week (but they won’t last that long!).
