These Brownie Truffles are perfect for those moments when you want something chocolatey, but don’t feel like baking a full batch of brownies


Ingredients

For the Brownie Truffles:

  • 1 batch baked brownies (homemade or store-bought)
  • 4 oz cream cheese, softened
  • ½ teaspoon vanilla extract

For the Chocolate Coating:

  • 10 oz semi-sweet or dark chocolate, melted
  • 1 teaspoon coconut oil or butter (for a smooth chocolate coating)
  • Optional: Sprinkles, crushed nuts, or sea salt for topping

Instructions

Step 1: Prepare the Brownie Dough

  1. Bake your brownies and let them cool completely. (Or use leftover brownies if you have any!)
  2. Crumble the brownies into a large bowl, making sure there are no big chunks.
  3. Mix in the softened cream cheese and vanilla extract, stirring until the mixture is smooth and forms a dough-like consistency.

Step 2: Roll the Truffles

  1. Scoop out about 1 tablespoon of the mixture and roll it into a ball.
  2. Place the brownie balls on a parchment-lined baking sheet.
  3. Refrigerate for at least 30 minutes to firm up.

Step 3: Dip in Chocolate

  1. Melt the chocolate and coconut oil together until smooth.
  2. Using a fork or skewer, dip each brownie ball into the melted chocolate, letting the excess drip off.
  3. Place back on the parchment paper and immediately sprinkle with sea salt, sprinkles, or crushed nuts if desired.

Step 4: Chill and Enjoy!

  1. Let the truffles set in the fridge for at least 15-20 minutes before serving.
  2. Store in an airtight container in the fridge for up to a week (but they won’t last that long!).
