This cake holds a special place in my heart. I remember making it for a family celebration, and it quickly became a tradition.

For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Strawberry Filling:
- 2 cups fresh strawberries, hulled and chopped
- ⅓ cup granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
For the Frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- ½ cup heavy cream
- 1 teaspoon vanilla extract
Instructions
Step 1: Bake the Cake
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, vegetable oil, eggs, and vanilla extract. Beat until smooth. Slowly stir in the boiling water (the batter will be thin).
- Divide the batter evenly between the prepared pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
Step 2: Prepare the Strawberry Filling
- In a small saucepan, combine the chopped strawberries and sugar. Cook over medium heat until the strawberries release their juices (about 5 minutes).
- In a small bowl, mix the cornstarch and water until smooth. Add this mixture to the strawberries and cook for another 2–3 minutes until thickened. Let the filling cool completely.
Step 3: Make the Frosting
- In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the heavy cream.
- Beat until smooth and fluffy. Stir in the vanilla extract.
Step 4: Assemble the Cake
- Place one cake layer on a serving plate. Spread a generous layer of strawberry filling over the top.
- Place the second cake layer on top and frost the entire cake with the chocolate frosting.
- Garnish with fresh strawberries if desired.
