- 1 cup all-purpose flour
- ½ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk
- ½ cup hot water or brewed coffee (for deep chocolate flavor!)
For the Chocolate Mousse Layer:
- 1 ½ cups heavy whipping cream
- 1 cup semisweet chocolate chips, melted
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
For the Chocolate Ganache:
- ½ cup heavy cream
- ¾ cup semisweet or dark chocolate, finely chopped
Instructions
Step 1: Bake the Chocolate Cake Base
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix melted butter, both sugars, eggs, and vanilla. Add buttermilk and mix until smooth.
- Gradually add the dry ingredients, then stir in hot water/coffee until fully combined.
- Pour into the pan and bake for 25-30 minutes. Let cool completely.
Step 2: Make the Chocolate Mousse
- Melt the chocolate chips and let them cool slightly.
- In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until soft peaks form.
- Gently fold in the melted chocolate until smooth and airy.
Step 3: Assemble the Cake
- Spread the mousse layer over the cooled cake and smooth the top.
- Chill for at least 2 hours to set.
Step 4: Make the Ganache & Finish
- Heat heavy cream until just simmering, then pour over the chopped chocolate. Let sit for 2 minutes, then stir until smooth.
- Pour the ganache over the mousse layer and spread evenly.
- Chill for another 1-2 hours until fully set.
