Ingredients
- 1 large onion, thinly sliced
- 2 tbsp butter, divided
- 1 tbsp olive oil
- 1 tsp sugar
- ½ tsp salt
- 2 tsp balsamic vinegar (optional)
- 4 slices of thick-cut bread (sourdough or French bread works best)
- 1½ cups shredded Gruyère or Swiss cheese
- 2 tbsp mayonnaise or softened butter for spreading
Instructions
Step 1: Caramelize the Onions
Heat 1 tbsp butter and olive oil in a skillet over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, for 20-25 minutes until the onions are golden and caramelized. Add balsamic vinegar for extra depth of flavor, then set aside.
Step 2: Assemble the Sandwich
Spread mayonnaise or softened butter on one side of each bread slice. On the unbuttered side of two slices, layer a generous amount of shredded Gruyère and caramelized onions. Top with the remaining bread, buttered side facing out.
Step 3: Grill to Perfection
Heat a skillet or griddle over medium heat. Add the sandwiches and cook for 3-4 minutes on each side, pressing gently, until the bread is golden brown and the cheese is melted.
Step 4: Serve and Enjoy
Slice in half and serve warm. Pair with a side salad or a cup of tomato soup for the ultimate comfort meal.
