For the Crust:
- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 4 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional, for a slight tang)
Optional Toppings:
- Fresh berries (strawberries, blueberries, raspberries)
- Chocolate sauce or caramel drizzle
- Whipped cream
- Crushed nuts or cookie crumbs
Instructions
Step 1: Prep the Crust
- Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.
- In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture looks like wet sand.
- Spoon about 1 tablespoon of the mixture into each muffin cup and press down firmly to create a solid crust.
Step 2: Mix the Cheesecake Filling
- In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add in the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract and lemon juice (if using) until everything is well combined.
Step 3: Fill & Bake
- Spoon the cheesecake filling over the crusts, filling each cup about ¾ full.
- Bake for 18-20 minutes, or until the centers are set but still slightly jiggly.
- Let them cool to room temperature, then refrigerate for at least 2 hours (overnight is even better!).
Step 4: Top & Serve
- Once chilled, remove from the liners and add your favorite toppings—fresh berries, a drizzle of chocolate, or a dollop of whipped cream. Serve and enjoy!
