For the Sauce:
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 cup freshly grated Parmesan cheese (not the powdered kind!)
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg (optional, but enhances the flavor)
- ½ cup pasta water (reserved)
For the Pasta:
- 12 oz penne pasta
- 1 tablespoon salt (for boiling water)
Optional Add-Ins:
- Grilled chicken for a protein boost
- Shrimp or scallops for a seafood twist
- Spinach or broccoli for some greens
- Mushrooms for an earthy depth
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions until al dente.
- Reserve ½ cup of pasta water, then drain the pasta and set aside.
Step 2: Make the Alfredo Sauce
- In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 30 seconds, just until fragrant.
- Pour in the heavy cream, stirring constantly. Let it simmer (not boil) for about 2-3 minutes, allowing it to thicken slightly.
- Lower the heat and add the Parmesan cheese, stirring until melted and smooth.
- Season with salt, black pepper, and nutmeg (if using). If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
Step 3: Toss & Serve
- Add the drained penne pasta to the sauce, tossing until fully coated.
- Remove from heat and let the pasta sit for a minute or two to allow the sauce to cling.
- Garnish with extra Parmesan cheese and fresh parsley if desired.
