Ingredients
- 1 cup jasmine rice (or basmati rice)
- 1 can (400ml) coconut milk (full-fat for extra creaminess)
- ½ cup water
- ½ tsp salt
- 1 tsp sugar (optional, for a touch of sweetness)
- Fresh cilantro or lime wedges (for garnish)
Instructions
1️⃣ Rinse the Rice:
Start by rinsing the jasmine rice under cold water until the water runs clear. This removes extra starch and helps the rice come out light and fluffy.
2️⃣ Simmer the Coconut Milk:
In a medium saucepan, combine the coconut milk, water, salt, and sugar. Bring to a gentle simmer over medium heat.
3️⃣ Add the Rice:
Stir in the rinsed rice, cover, and reduce the heat to low. Let it simmer for 12-15 minutes until the liquid is absorbed and the rice is tender.
4️⃣ Fluff & Serve:
Turn off the heat and let the rice sit (covered) for 5 minutes. Fluff with a fork and sprinkle with fresh cilantro or a squeeze of lime juice before serving.
