Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cornstarch (for extra softness!)
  • ½ cup sprinkles (plus extra for rolling)

Instructions

Step 1: Prep & Preheat

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Cream the Butter & Sugar

  1. In a large bowl, beat butter and sugar together until light and fluffy (about 2 minutes).
  2. Mix in egg and vanilla extract until smooth.

Step 3: Add Dry Ingredients

  1. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cornstarch.
  2. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.

Step 4: Add Sprinkles & Roll

  1. Gently fold in ½ cup sprinkles.
  2. Scoop tablespoon-sized balls of dough and roll them in extra sprinkles for extra color.

Step 5: Bake to Perfection

  1. Place cookie dough balls 2 inches apart on the prepared baking sheet.
  2. Bake for 9-11 minutes, until the edges are lightly golden but the centers are still soft.
  3. Let cookies cool for 5 minutes on the baking sheet, then transfer to a wire rack.
