Description

If you love moist, fluffy cake, tropical pineapple flavor, and a rich cream cheese frosting, then this Elvis Presley Pineapple Cake is going to rock your taste buds!


Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 (20 oz) can crushed pineapple (with juice, do not drain!)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • ½ cup chopped pecans (optional, for garnish)

Instructions

Make the Cake Batter:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking pan.
  • In a large bowl, mix together flour, sugar, baking soda, and salt.
  • Add eggs, vanilla, and crushed pineapple (with juice!), stirring until combined.
  • Pour the batter into the greased baking pan.

2. Bake the Cake:

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting.

3. Make the Cream Cheese Frosting:

  • In a mixing bowl, beat cream cheese and butter until smooth.
  • Add vanilla extract and gradually beat in powdered sugar until fluffy.

4. Frost & Garnish:

  • Spread the frosting over the cooled cake.
  • Sprinkle with chopped pecans for a classic Southern touch!
