For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2Â large eggs
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 1 (20 oz) can crushed pineapple (with juice, do not drain!)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- ½ cup chopped pecans (optional, for garnish)
Instructions
Make the Cake Batter:
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan.
- In a large bowl, mix together flour, sugar, baking soda, and salt.
- Add eggs, vanilla, and crushed pineapple (with juice!), stirring until combined.
- Pour the batter into the greased baking pan.
2. Bake the Cake:
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting.
3. Make the Cream Cheese Frosting:
- In a mixing bowl, beat cream cheese and butter until smooth.
- Add vanilla extract and gradually beat in powdered sugar until fluffy.
4. Frost & Garnish:
- Spread the frosting over the cooled cake.
- Sprinkle with chopped pecans for a classic Southern touch!
