- 12 oz pasta (spaghetti, fettuccine, or your favorite shape)
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 4–5 cloves garlic, thinly sliced
- 2 cups cherry tomatoes, halved
- Salt & pepper, to taste
- 1/4 tsp red pepper flakes (optional, for a little heat)
- 1 large ball of burrata cheese
- Fresh basil leaves, for garnish
- Grated parmesan, for serving (optional)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Reserve 1/2 cup of pasta water before draining.
Step 2: Make the Garlic Butter Sauce
- While the pasta cooks, heat the butter and olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant and golden—about 1-2 minutes.
Step 3: Roast the Tomatoes
- Add the cherry tomatoes to the skillet. Season with salt, pepper, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the tomatoes are soft and bursting with flavor.
Step 4: Toss the Pasta
- Add the cooked pasta to the skillet with the tomatoes and garlic butter. Toss everything together, adding a splash of reserved pasta water if needed to create a silky sauce.
Step 5: Serve with Burrata
- Transfer the pasta to bowls or a large serving dish. Top with the burrata—tear it open so that the creamy center spills over the pasta. Garnish with fresh basil and a sprinkle of parmesan if desired.
