This Garlic Parmesan Chicken and Potatoes dish is a one-pan wonder, combining tender, juicy chicken thighs with crispy, golden potatoes, all coated in a mouthwatering garlic parmesan sauce.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional garnish)

Instructions

1. Prep the Ingredients

  • Preheat your oven to 400°F (200°C).
  • Season chicken thighs with salt, pepper, paprika, and Italian seasoning. Toss potatoes with olive oil, garlic, thyme, salt, and pepper.

2. Sear the Chicken

  • Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 3-4 minutes until golden. Flip and cook for another 2 minutes. Remove and set aside.

3. Cook the Potatoes

  • In the same skillet, add the seasoned potatoes. Cook for 5 minutes, stirring occasionally, until they begin to brown.

4. Assemble and Bake

  • Return chicken thighs to the skillet, nestling them among the potatoes. Sprinkle grated parmesan evenly over the dish. Transfer the skillet to the oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

5. Garnish and Serve

  • Remove from the oven and sprinkle with fresh parsley for a pop of color. Serve hot and enjoy!
