- 4 slices Swiss cheese
- 4 slices bacon, cooked crispy
- 4 burger buns, toasted
- ¼ cup teriyaki sauce
- Lettuce, red onion slices, and tomato for toppings
- Salt & pepper, to taste
For the Spicy Mango Loaded Fries:
- 1 bag frozen fries (or homemade if you’re feeling fancy)
- 1 ripe mango, diced
- ½ red onion, finely chopped
- 1 jalapeño, minced (adjust to your spice level)
- ¼ cup cilantro, chopped
- Juice of 1 lime
- 2 tbsp sriracha
- ¼ cup mayonnaise
- Salt & pepper, to taste
Instructions
Step 1: Prep the Spicy Mango Salsa
- In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt & pepper to taste. Let it sit to allow the flavors to meld.
Step 2: Make the Sriracha Mayo
- In a small bowl, mix together the sriracha and mayonnaise until smooth. Set aside.
Step 3: Cook the Fries
- Cook the frozen fries according to package instructions until golden and crispy. If making homemade, fry or bake until perfectly crisp.
Step 4: Grill the Pineapple and Burgers
- Preheat your grill or skillet to medium-high heat.
- Season the burger patties with salt & pepper and grill for about 4-5 minutes per side until cooked to your desired doneness.
- During the last minute of cooking, top each patty with a slice of Swiss cheese and let it melt.
- Grill the pineapple rings for about 1-2 minutes per side until lightly charred.
Step 5: Assemble the Burgers
- Place the lettuce on the bottom bun, followed by the burger patty, grilled pineapple, and crispy bacon. Drizzle with teriyaki sauce and top with onion slices and tomato if desired. Add the top bun.
Step 6: Load the Fries
- Once the fries are done, pile them onto a serving platter. Spoon the spicy mango salsa over the fries and drizzle generously with the sriracha mayo. Garnish with extra cilantro if desired.
