Ingredients
For the Brownies:
- 2 ripe bananas, mashed
- ¼ cup maple syrup (or honey)
- ¼ cup coconut oil (or Greek yogurt)
- 1 teaspoon vanilla extract
- 1 egg (or flax egg for vegan)
- ½ cup unsweetened cocoa powder
- ½ cup oat flour (or almond flour for gluten-free)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ⅓ cup dark chocolate chips (plus extra for topping)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
In a large bowl, mash the bananas until smooth. Stir in the maple syrup, coconut oil, vanilla extract, and egg until fully combined.
Sift in the cocoa powder, oat flour, baking soda, and salt. Mix until just combined—don’t overmix! Fold in the dark chocolate chips.
Pour the batter into the prepared baking dish and spread evenly. Sprinkle a few extra chocolate chips on top for extra indulgence. Bake for 18-22 minutes, or until the edges are set but the center is still slightly soft.
