Heart-Melting Chocolate Espresso Cookies are the ultimate treat for anyone who loves the deep, bold flavor of espresso paired with rich, fudgy chocolate. 


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 tbsp espresso powder
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chunks (optional, for extra richness)

Instructions

Step 1: Cream the Butter and Sugar

  1. In a large mixing bowl, beat the butterbrown sugar, and granulated sugar together until light and fluffy. This should take about 2-3 minutes with an electric mixer.

Step 2: Add the Wet Ingredients

  1. Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and espresso powder, mixing until fully combined.

Step 3: Combine the Dry Ingredients

  1. In a separate bowl, whisk together the flourcocoa powderbaking sodabaking powder, and salt. Slowly add the dry ingredients to the wet mixture, mixing just until combined.

Step 4: Add the Chocolate

  1. Fold in the chocolate chips and dark chocolate chunks if using. The dough will be thick and rich—just like we want it!

Step 5: Bake the Cookies

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Scoop out tablespoon-sized portions of dough and place them on the baking sheet, leaving about 2 inches between each cookie.
  3. Bake for 9-11 minutes until the edges are set but the centers are still soft. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
