For the Cookie Dough:
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
Instructions
Step 1: Make the Fig Filling
- In a saucepan, combine chopped figs, honey, vanilla, orange zest, cinnamon, and water over medium heat.
- Simmer for 8-10 minutes, stirring occasionally, until the figs break down and the mixture thickens.
- Let cool slightly, then blend in a food processor until smooth.
Step 2: Prepare the Cookie Dough
- In a mixing bowl, beat butter and brown sugar until light and fluffy.
- Mix in the egg, vanilla, and orange zest until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
Step 3: Assemble the Fig Newtons
- Roll out the dough into a ¼-inch thick rectangle on a floured surface.
- Cut into 2-inch wide strips and spread a thin layer of fig filling down the center.
- Fold the dough over the filling, pressing the edges to seal.
- Slice into bite-sized squares and transfer to a lined baking sheet.
Step 4: Bake & Cool
- Preheat oven to 350°F (175°C) and bake for 12-15 minutes, until lightly golden.
- Let cool completely before enjoying!
