  • 4 large egg whites

Instructions

Step 1: Heat the Egg Whites & Sugar

  1. In a heatproof bowl (or the bowl of a stand mixer), whisk together egg whites, sugar, cream of tartar, and salt.
  2. Place the bowl over a simmering pot of water (double boiler method), making sure the bottom doesn’t touch the water.
  3. Whisk constantly for 3-4 minutes, until the sugar dissolves and the mixture reaches 160°F (71°C) (warm to the touch).

Step 2: Whip into Fluffy Perfection

  1. Remove the bowl from heat and immediately beat with a hand or stand mixer on high speed for 5-7 minutes, until stiff, glossy peaks form.
  2. Add vanilla extract and mix for 30 more seconds until incorporated.

Step 3: Frost & Enjoy!

  1. Use immediately to pipe or spread onto cupcakes, cakes, or cookies.
  2. For a toasted effect, use a kitchen torch to gently brown the peaks.
  3. Serve & enjoy the marshmallowy deliciousness!
