Ingredients
Scale
- 4 large egg whites
- 1 cup granulated sugar
- ¼ teaspoon cream of tartar (helps stabilize the frosting)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
Step 1: Heat the Egg Whites & Sugar
- In a heatproof bowl (or the bowl of a stand mixer), whisk together egg whites, sugar, cream of tartar, and salt.
- Place the bowl over a simmering pot of water (double boiler method), making sure the bottom doesn’t touch the water.
- Whisk constantly for 3-4 minutes, until the sugar dissolves and the mixture reaches 160°F (71°C) (warm to the touch).
Step 2: Whip into Fluffy Perfection
- Remove the bowl from heat and immediately beat with a hand or stand mixer on high speed for 5-7 minutes, until stiff, glossy peaks form.
- Add vanilla extract and mix for 30 more seconds until incorporated.
Step 3: Frost & Enjoy!
- Use immediately to pipe or spread onto cupcakes, cakes, or cookies.
- For a toasted effect, use a kitchen torch to gently brown the peaks.
- Serve & enjoy the marshmallowy deliciousness!
