- ½ cup vegetable oil (for frying or brushing)
For the Taco Meat:
- ½ lb ground beef (or ground turkey for a lighter option)
- 1 tablespoon taco seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ cup water
For the Toppings:
- ½ cup refried beans (warmed for easy spreading)
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup taco sauce (or enchilada sauce for extra flavor!)
- ¼ cup diced tomatoes
- 2 tablespoons sliced green onions
- ¼ cup sliced black olives (optional)
- Sour cream, guacamole, or jalapeños (for serving, optional)
Instructions
Step 1: Crisp the Tortillas
- Heat a skillet over medium heat and add a little oil.
- Fry each tortilla for 1-2 minutes per side, until golden brown and crispy.
- Drain on paper towels and set aside. (For a lighter version, bake at 400°F for 5-7 minutes instead!)
Step 2: Cook the Taco Meat
- In a skillet over medium heat, cook ground beef until browned. Drain any excess fat.
- Stir in taco seasoning, garlic powder, onion powder, and water. Simmer for 2-3 minutes, then remove from heat.
Step 3: Assemble the Pizzas
- Spread refried beans on two of the crispy tortillas.
- Top with taco meat, then place another tortilla on top (like a sandwich).
- Spread taco sauce over the top tortilla and sprinkle with cheese.
Step 4: Bake to Perfection
- Place pizzas on a baking sheet and bake at 400°F for 5-7 minutes, until the cheese is melted and bubbly.
Step 5: Top & Serve!
- Remove from the oven and top with diced tomatoes, green onions, and black olives.
- Slice and serve with sour cream, guacamole, or extra taco sauce!
