For the Salmon:
- 4 salmon fillets (6 oz each)
- Salt and black pepper, to taste
- 1 tbsp olive oil
For the Honey Pineapple Glaze:
- 1 cup fresh pineapple, diced (or canned, drained)
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp fresh lime juice
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 1 tbsp butter
Optional Garnish:
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Prepare the Salmon:
Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper. - Sear the Salmon:
Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down and cook for 3–4 minutes until the skin is crispy. Flip and cook for another 2 minutes. Remove from the skillet and set aside. - Make the Glaze:
In the same skillet, add butter and let it melt. Stir in the garlic and ginger, cooking until fragrant. Add the pineapple, honey, soy sauce, and lime juice. Cook for 3–5 minutes, stirring occasionally, until the pineapple caramelizes and the glaze thickens. - Combine and Finish:
Return the salmon to the skillet, spooning the glaze over the fillets. Cook for another 2–3 minutes until the salmon is cooked through and coated in the glaze. - Serve:
Transfer the salmon to plates and drizzle with any remaining glaze. Garnish with fresh cilantro and lime wedges, if desired.
